Family dinner has become quite the affair in our household. The more we grow up, the more elaborate each meal becomes, due to the varied tastes and requests of the diners. Take taco night tonight for instance. Anyone walking in would have thought it was Cafe Rio, family style. We had two friends, their mother is in the hospital, our grandparents, and one uncle - plus the usual hoodlums.
Just a quick recap of the specialty foods and I think you'll see what I mean. There were whole wheat and spinach tortillas for the girls. Hard corn taco shells for the boys. A bowl of taco meat, with no taco seasoning, for dad's dislike of flavor…oh I mean, "because he doesn't want us to ruin the flavor of that good home grown beef with any other stuff." Two other bowls of seasoned taco meat for the rest. A jello salad so our hibernating bear, Neal, won't go completely into hibernation.
Cornbread and homemade honey butter to keep Grandpa and Grandma happy. Spinach along with Lettuce for me and mom. Light chicken, shredded with tomatillo fresh salsa for the health conscious. Plenty of shredded cheese for the not so health conscious. Schwans - not any other kind - Schwans Vanilla Ice Cream for Rick. Among other things, tomatoes, mango salsa, tomatillo salsa, soda, milk, water and I can't even forget….a pot of spaghetti and garlic bread just in case anyone needs anything else. Normally we don't serve two choices, it just so happened to work out that way tonight. And there are times when we have a eat it or eat cereal policy. But as we sat around and laughed, I realized that it was probably worth all the trouble. We each have our own little quirks, but we somehow stick together to create a unique blend, just like the lime I ate to finish my dinner.
